KFC inspired slow cooked chicken. IBS friendly.
Colonel’s style chicken is always a winner. Unfortunately, not all of us can eat fried foods, so making kfc chicken in a slow cooker seems like a win-win!
And because it’s a crock pot recipe, chicken will be soft, moist and delicious!
– 6 chicken thighs
– tomato basil sauce (few tablespoons)
-one/two beaten eggs (depending on how big your chicken thighs are)
-spices: coarse salt (1 teaspoon), mild chili powder/ sweet chili (pinch), coarse pepper (1-2 teaspoons)
– gluten free bread crumbs
-few lactose free mini mozzarella balls (optional)
Put ingredients into the crock pot as follows: layer of sauce (to cover bottom of the slow cooker),chicken thighs, spices, beaten egg/eggs, bread crumbs (make sure chicken pieces are thoroughly covered with eggs and crumbs). Throw few mozzarella mini balls into the crock pot.
If you need to put thighs on top of each other, remember to put generous layer of beaten eggs and crumbs between the pieces. You can add tablespoon of sauce too, to make it more moist (but it’s optional).
Cook it on low for 6 hrs.
