Potato drop scones – latkes.

Preparation & cooking time: 20-30 min
Serves :4

Shopping list:
– 7or 6 big potatoes
– flour (half a cup)
– 2 eggs
– salt (2-3 teaspoons)
– oil (2 tablespoons)
– double cream (optional)
– sugar (optional)
– mayonnaise (optional)
– ketchup (optional)
– dill sauce (optional)

– potato masher or grater
– frying pan
– tablespoon
– mixing bowl

Mash/grate potatoes. Add salt, flour, eggs and stir well.
When comparing to pancake mix: your mixture should be twice as thick.You can add more flour if needed.
Heat 2 tablespoons of oil in the pan.
Using a tablespoon pour potato mix onto the hot pan and make small, round-shaped drop scones.Leave 1 cm space between each scone. Fry about 3-4 minutes on each side ( till golden brown) .
Serve with sugar and cream or with ketchup/mayo/dill sauce.
