Delicious chocolate – coconut cake made in the slow cooker.
Have you ever wondered how to make a cake in the crock pot? It’s super easy and mess free! Today, I will share with you very simple, but ‘oh so delicious’, chocolate-coconut cake recipe. You can slow cook it in just 2 hours!
– chocolate sponge cake mix
– 2 eggs ( or: as many as instructed on the cake mix package)
– 8 tablespoons of water -120 ml ( or: as many as instructed on the cake mix package)
– coconut flakes(4 tablespoons)
– 3-5 chocolate squares (preferably with carmel filling)
– blueberries for serving (optional)
In a medium sized bowl, combine eggs, cake mix, water, 3 tablespoons of coconut flakes and mix it all till it’s smooth and creamy. Put crock pot bag first, and then pour mixture into the slow cooker. Cover and cook on high for about 2 hrs, but please, check on your cake from time to time. There’s no need to open the lid, unless you see your cake is getting to dark around the edges. In that case, you can open the lid and check if cake is thoroughly baked (preferably, using a long, cocktail toothpick or temperature checker). You can gently insert toothpick or temperature checker into the middle of the cake, if it comes out dry, your cake is ready. Turn of your slow cooker and put few chocolate squares on the top of the cake, cover again, but leave slow cooker off. Leave it for 15 minutes.
Uncover, and carefully take out crock pot bag with cake in it. It should be easy to detach cake from the bag, but you can use wooden spatula to help you. Use knife or a spoon to spread melted chocolate across the top of the cake and sprinkle remaining coconut flakes on top.
You can serve it with blueberries on the side.
