Delicious ground beef casserole.
IBS friendly recipe:)
Comfort food is one of the little things that makes us happy during autumn and winter months. This beef casserole is a very easy and cheap dinner idea, your family (and your wallet !) is going to love this fall.
Ingredients: one packet of rice (125g), ground beef (500g), fresh basil, Mexican spice mix, grated cheese (half a cup or less, preferably Parmesan or lactose free cheese), tomato/basil/Parmesan sauce.
Please note: If you’re an IBS sufferer, go easy on the cheese. People suffering from IBS can still eat some hard cheeses, but there’s always a risk they may upset your stomach. Use small amount of grated hard cheese (like Parmesan, cheddar, Gouda ) or use lactose free alternative.
If sauce is too thick for your liking, mix it with a bit of water. Cook rice as normal (you can use quick rice). Pour a bit of sauce into the casserole dish (to cover the bottom), add ground beef (use fork or wooden spoon to further separate it), add spices and more sauce. Finally, throw rice & chopped basil into the mix and stir it thoroughly. Put a bit of grated cheese on top. Preheat oven to 200C. Bake on the middle shelf from 45 minutes to an hour.
Bon appetit !
