Mini Christmas Pies. Dough recipe and easy to make filling ideas.
I never use yeast when making pizza or pie dough. I know, it’s a controversial statement 😉 . I just really work on the dough (no pun intended!) :- D After mixing all the ingredients, I knead dough for few minutes (making it as gooey as possible). Then, I put dough onto a floured work surface and I use my knuckles while forming pizza or pie base. This trick makes dough puffy and fluffy!
The other thing when making dough is to get creative with it and experiment! Don’t be afraid to add ingredient that is not on the list or to cut down on ingredients. I’ve created number of dough recipes over the years (some better than others) by adding, mixing and removing ingredients. Recipe I’m about to share with you, is the easiest of the bunch. You can make pizza, cookie or pie dough just 40 minutes before guests arrive.
You will need:
rolling pin, cookie cutter, bowl, wooden spoon
3 cups of flour, 100-200 ml of milk, 1-2 eggs, 1 tablespoon of sugar, fruit filling (fruit sauce), sugar powder, 50 ml of water, sugar powder
Throw all the ingredients (I would start with 3 cups of flour,100 ml of milk, 50 mg of water,1 egg and tablespoon of sugar) in the medium-sized bowl and mix them till your mixture gets gooey. Add more flour if mix sticks to your fingers too much. Add additional 100 ml of milk and one more egg if it’s too dry and won’t stick together.
After couple minutes of mixing, you should see your dough forming.
Put dough onto a floured work surface and knead it till it gets soft and puffy. Divide dough into two equal parts. Use one to create small (or medium-sized), edible pie cases and second to create festive-shaped tops for the pies. Use your hands to form fillable round or boat-shaped pie cases. Use rolling pin to flat rest of the dough and use cookie cutters to create pie tops.
Fill your cupcakes with filling (or sauce) of your choice (I used Easy Christmas Sauce, but you can go with Easiest apple sauce in the world or create your own) and put edible cut out on top. You can use leftover dough from cut-outs to make more pies and tops. Don’t let it go to waste.
Bake in a preheated oven in 200C or 180C (for fan assisted ovens) for 15 or 20 minutes (or till base is golden brown and filling piping hot). Sprinkle with sugar powder and enjoy!
