3 ingredient healthy salad. Simple snack idea.
If you want to eat healthy, but you know that busy days are on the way, fear not! You can still have healthy, light snack. This one takes 5 minutes to prepare, it’s low FODmap (IBS friendly), vegan, gluten free, lactose free and it’s still very yummy!
pomegranate seeds, organic spinach and coconut milk feta
finely chop spinach, cut coconut milk feta into small cubes and mix it with ‘ready to eat’ pomegranate seeds.
Coconut milk Greek style cheese (feta) has very mellow, sweet taste that perfectly contrasts with tangy pomegranate seeds. Pomegranate seeds give the salad juiciness and they make it very refreshing. I don’t know where you stand on spinach, but it’s a real vitamin boost! Spinach is full of: vitamin A, vitamin B1, vitamin B2, vitamin B6, vitamin C, vitamin E, vitamin K, manganese, folate, magnesium, iron, copper, calcium, potassium, phosphorus and zinc. It’s a health on a plate! Who said clean eating can’t be tasty? 🙂
If you’re in the hurry and you do fancy a light and healthy snack, this salad is a way to go.
