Low FODmap tortilla roll ups

Yummy and easy to make appetizers.
You can make them Low FODmap or regular.

Every recipe makes for one big plate of appetizers.

Low FODmap recipe no 1:

– 2 gluten-free, corn tortillas
– lactose-free soft cheese ( 1-2 tablespoons)
– pesto paste (2 tablespoons; watch out for garlic!)
– fresh cucumber (3 tablespoons, diced)
– fresh mint (2 tablespoons, chopped)

Spread cottage cheese and pesto paste on top of warmed up tortillas, add fresh cucumber and mint. Roll tortillas up, cut them into pieces, serve and enjoy!

Low FODmap recipe no 2:

– 2 gluten-free, corn tortillas
– lactose-free soft cheese (2 tablespoons )
– fresh basil (1 tablespoon, chopped)
– sun-dried tomatoes (3 tablespoons)
– fresh mint (1 tablespoon, chopped)
– fresh cucumber (2 tablespoons, diced)
If this one isn’t your biggest trigger, you can add one tablespoon of chopped mango. Still, it’s high fodmap, so be careful!

Spread cottage cheese on top of warmed up tortillas, add rest of the ingredients. Roll tortillas up, cut them into pieces and serve.

Low FODmap tortilla roll ups

Regular recipe no 1:

– 2 corn tortillas
– ketchup (1 tablespoon)
– corned beef (finely chopped, 2 tablespoons)
– spicy cornichons (handful)
– fresh basil (chopped, 1 tablespoon)

Spread ketchup on top of the warmed tortillas, add rest of the ingredients. Roll tortillas up, cut them into pieces and serve.

Regular recipe no 2:

– 2 corn tortillas
– soft cheese (2 tablespoons)
– fresh basil (1 tablespoon, chopped)
– sun-dried tomatoes (2 tablespoons)
– fresh mint (1 tablespoon, chopped)
– fresh mango (1-2 tablespoons, diced)

Spread cottage cheese on top of warmed up tortillas, add rest of the ingredients. Roll tortillas up, cut them into pieces and serve.
This recipe is my favorite! There’s something about sun-dried tomatoes, fresh mint, and mango combination that makes it really special!
