We’ve all been there! The ultimate, afternoon snack craving! It’s very easy to fall out of the no-sugar or diet wagon. Especially if you’re on the go. That’s why I came up with healthy snack recipe, to keep my sugar cravings at bay. This recipe is my favorite, because I adore bananas and I really love oats.
Give it around 10 minutes and these two, random ingredients can become an energy boosting bars! And you can add something extra too (as third ingredient).
I don’t really trust store bought snacks. They’re often full of hidden sugar or honey (which is not suitable for IBS sufferers). Homemade energy bars are a safe bet, as you know exactly what’s in them. You can go fancy and add bunch of raisins, finely chopped nuts or chocolate sauce (as I did), but to be honest, bananas and oats will do too! This is the easiest recipe in the world and it’s healthy. If you’re really trying to cut back on the sweet stuff or you’re at the beginning of your elimination diet (IBS sufferers), skip chocolate sauce entirely.

Energy bars recipe

Ingredients:

one large & ripe banana, cup of oats, gluten free chocolate sauce

I’ve chosen natural chocolate sauce with chicory root and fat reduced cocoa. Please remember, more cocoa means less sugar, so if you want to choose healthier option, dark chocolate sauce is a way to go.

Instructions:

Mash one ripe banana and mix it with cup of oats. Mush the pulp until it’s properly mixed together. Form small (2 cm x 1 cm), not too thick (2 cm thick max) bars. Put them on a microwave suitable plate. Bake them in the microwave on 700 watt for about 1-2 minutes. Keep an eye on the bars, so they don’t burn. Baking time may vary (depending on your microwave wattage). Remove plate from the microwave. Wait till bars cool naturally and sprinkle some chocolate sauce on them.

I’ve made two batches: first one with less oats (one cup, as stated in the recipe above) and the other one with more oats (one and a half cup). Both were tasty. First one was more moist, second one – more filled. You can go either way, depending on your likings.
